Right now, I’m on the search for Sichuan “Tapas” inspired dish, or small plates. A Sichuan feast will always begin with a spread of small plates, consist of sliced cold poultry dressed in chili oil; beef with Sichuan pepper; cool, colorful vegetables; and seasonal salads. Its a great introduction to Sichuan cuisine!
This pork dish main ingredient is Sichuan pepper (Hua Jiao). It looks pretty, but when cooked, it has an aroma of floral and numbness that can be lethal when not balanced with sugar or vinegar. BEWARE!
