Tianjin Dong-Tsai

The cabbage is shredded, salted, and preserved with a crunch. It is grown primarily in the area around Tianjin, south of Beijing.

The ingredient does need to be rinsed before using because it is quite salty. After rinsing it, dry it out on a paper towel.

In addition, you can use this ingredient with green beans, soups, and dumplings. Especially great for vegetarian dishes seeking more flavor. Umami Baby!
