Tofu is great!! It is highly nutritious and rich in protein. It is made from yellow soy beans, which are soaked, ground, mixed with water, and then cooked briefly being solidified. It is sold in three forms of texture: soft, medium, and hard.
I used a soft tofu in this dish because I wanted a smooth and seductive taste to complement with the salad and dressing. Since tofu is bland, I would use arugula/watercress and shiso/mint to give the dish a peppery and herbal flavor.
Don’t be shy in adding more dressing since tofu is bland already.
